If you or a loved one suffers from a sensitive stomach, diabetes, or hypoglycemia, this Fun With GF/LG Food review shows how this cookbook may help you eliminate almost all the food related problems in a person’s life.

GF stands for gluten free and LG stands for low glycemic index, and in my Fun With GF/LG Food review, you’ll learn how to prepare food that anyone who suffers from food allergies, diabetes, IBS — or other conditions that limit what they can eat– can eat without fear and truly enjoy when they dine with you in your home.

All the recipes in this gluten free low glycemic index cookbook are marked with which ingredients may be prone to cause a reaction in someone sensitive to them, and substitutes are listed that can be used in place of these sensitive foods to make it possible to prepare the dish without having to fear that someone in the family or a guest at a party may react to the food in a bad way.

SPORTS NUTRITION © Patricia Niland 2005

To realise potential, it is vital that an athlete has the
ability to train consistently. Successful training, over time,
builds a stronger, faster, more efficient body which will
hopefully go on to produce optimum athletic performances. Time
lost due to ill health, is time that a competitive athlete
cannot afford to lose. In the long term the athlete and his/her
coach needs to be conscientious about their own ‘care’ and
acknowledge that they have a responsibility for the training and
nutrition factors within their control, both of which can
influence success or failure.

Illness can have profound effects on an athletes mental
perspective, causing loss of rythym and habit. Once recovered
the athlete may need to mentally regain focus. Maintaining a
healthy immune system is therefore a considerable factor in the
athletes pursuit of success.

Moderate exercise has been demonstrated to have beneficial
effects on the immune system, reducing the risk of colds and
chest infections. However for the competitive athlete who trains
at a greater intensity and for longer durations, intensive
exercise has the potential to cause immune suppression, with a
recognised window of lowered post exercise immunity existing
where the athletes system is vulnerable to infection (Nieman
2003).

Post-exercise immune suppression is thought to be partly due to
the increase in production of stress hormones such as cortisol
and adrenaline. Athletes training or competing in a
carbohydrate-depleted state, will experience a greater increase
in these hormones. It is therefore suggested that the ingestion
of 30-60g carbohydrate per hour by athletes, during intensive
exercise can create a reduction in stress and immune markers.
(Gleeson et al 2004)

Reduction in immune status also occurs when an athlete has
compromised glycogen and fat stores. This can be caused by the
ineffective replacement of calories after exercise, or a
conscious avoidance of fat. Calorific expenditure should
therefore be balanced by an equivalent intake of calories, and
the consumption of essential fats become more commonplace. When
the diet shows signs of nutrient deficiencies, supplementation
should be utilised to provide protection. However care should be
taken not to overcompensate and the diet should always be viewed
as the main provider of nutrients. (Venkatraman et al 2002)

Training alone is not responsible for the suppression of the
immune system. Neiman identifies many factors that can
contribute and should be considered

Diet Training and competition Family/relationships Work Travel
Rest Boost immunity and train consistently Optimum nutrition,
should be the fundamental consistent factor for any athlete.
When training schedules are planned, time should always be taken
to plan an appropriate dietary programme. This should be
specific to the individuals training and competition
requirements. Revisions in training intensity, increases or
decreases, should always merit revisions to the diet.

DIETARY RULES

Fats Saturated fats and trans/hydrogenated fats are not
essential to the body and should be avoided as they suppress
immunity and inhibit the function of essential fats. However the
essential fats Omega 3, 6 and 9 are vital for the athlete as
they enhance cell membrane integrity, increasing metabolism and
immunity. Emphasis should be given to _3’s. AVOID: Margarine
(hydrogenated fats) Processed foods and foods high in saturated
fats INCREASE:	Nuts – Brazil, almond, walnut, pecan, hazelnut.
Seeds and their oils – pumpkin, sunflower, sesame, hemp, flax
Oily fish – Mackerel, herring etc

Carbohydrates Refined carbohydrates (white rice and bread)
should be substituted for whole grains, ie. wholemeal bread and
brown rice, both for their nutrient and fibre content. Large
amounts of refined sugar should be avoided due to its immune
suppression potential.

Fruit and vegetable intake should be around 7-10 portions per
day. Organic produce is preferable and when possible vegetables
should be consumed raw to increase vitamin, phyto-chemicals and
enzyme content.

Protein Vegetarian athletes should ensure they are consistently
taking in high quality protein (see below). When the athlete is
not vegetarian, the increase/inclusion of vegetarian protein
would be beneficial. INCLUDE MORE: Beans, pulses, tofu and
quinoa, cheese (goats), eggs (with _3’s), oily fish AVOID:
Proteins high in saturated fats, red meats and processed meats
ie. burgers and sausages GENERAL RULES Stress Athletes need to
acknowledge stress and the role it can play in performance and
immunity. Priorities must to be identified, taking into
consideration all other life factors (see previous page).
Realistic, attainable goals can then be created, enabling the
athlete to train and compete whilst keeping stress levels to a
minimum.

Pulse test To check for over training/infection — this should be
done every morning before rising. Take the pulse. A rise of 8
beats or above from the average for the preceding week, would
signal that athlete should reduce training.

Sleep Quality sleep is essential.

Factors which suppress or inhibit immunity High intake of
dietary fats (saturated and trans fats) Compromised glycogen and
fuel depletion Training >90 minutes Over training Weight loss
Stress Lack of sleep Deficiency of dietary protein Deficiency of
vitamins A, C, E, B6 and B12 and the minerals iron, zinc,
selenium and copper

We all know the familiar story; you go through your teenage years and are quite active, maybe you play a little sport on weekends. Because of your high activity level and age your metabolism is also high so your weight is not a problem. Unfortunately this makes you complacent and you develop a taste for fatty junk food. You develop a habit of unhealthy eating because your metabolism helps you burn off most of the calories from the junk food and so the negative effects remain unnoticed.

As you move into adulthood your priorities change and you give up sports and focus more on work and social activities such as parties and drinking. You notice that you have some extra body fat but by now you’ve programmed your lifestyle habits into your subconscious and weight loss is still not a major concern. As you get to your 30’s or 40’s however you have a considerable amount of body fat and you start to see the health problems associated with your unhealthy lifestyle.

What you have unwittingly done in your life to date is set the snowball effect in motion, accumulating all the little unhealthy lifestyle habits along the way until the snowball has not only gained speed but has also become bigger year after year, and so have you. Like a large snowball rolling down a mountain, your health and body fat appear to be out of control and unstoppable.

The Good News

The good news is that you can use the snowball effect in a way to achieve health and weight loss by making incremental improvements to your lifestyle across multiple areas. This will cause your new weight loss snowball to grow and gather speed and lead you back to health. The most important thing to realize is that while you may not see immediate results from the slight changes to your lifestyle, the combination of incremental improvements across multiple lifestyle areas over time will achieve the weight loss you’re looking for.

Here is a list of things you can do to start your new weight loss snowball rolling:

1. Get Active – To burn off some of the body fat and strengthen your heart you need to do some form of exercise. A good starting point is walking as it is a low impact, low risk activity. Start out with a short walk at first and aim to walk farther and for longer each time. Once you have improved your fitness a little incorporate some star jumps, perhaps stop half way through your walk and do some star jumps and then complete your walk.

2. Eat Healthier – Gradually replace high fat and high sugar foods with healthier alternatives. First start with perhaps one meal a day and progress from there. After a while you will be more accustomed to healthy food and will make better food choices.

3. Eat Smaller Meals – It is better to have more frequent small meals than three large meals, so try cutting down your portion sizes and have a piece of fruit between meals.

4. Cut out Sugar Drinks – Eliminate soda drinks from your diet as they wreak havoc with your blood sugar, add body fat, and interfere with your hormonal system.

5. Reduce Alcohol – Alcohol has the same effects as soda drinks on your body so try to reduce your consumption as much as possible.

6. Drink lots of Water – Water helps eliminate all the body’s byproducts and is needed to flush the body of the waste associated with weight loss. It also helps give you that full feeling so sip a glass of water when eating.

7. Get Plenty of Sleep – It has been noted that a large proportion of the people who get inadequate sleep are overweight. This can be attributed in part to the effect that sleep deprivation has on the body’s hormonal system among other things.

8. Eat Slower – Most westerners eat way too fast, which leads to poor digestion and overeating. Eat slower and savor your food and you will feel fuller on less food.

There is no quick fix when it comes to weight loss, but if you make gradual improvements across a number of areas, the combined effect will put the brakes on the obesity snowball and have your weight loss snowball rolling before you know it.

Fast food restaurants and quickie snack foods are the main types of food for people in America these days. Very rarely does anyone sit down at the table for a nutritional home cooked meal anymore. Instead we run into a fast food place and grab whatever we can and stuff the greasy, fatty foods into our systems. It is pretty easy to see why some people do not feel well most of the time. Just think of how your car would run if you put bad gas into it all of the time.

Food is fuel for our bodies, and if we put unhealthy food into our system then we can expect to feel badly. Healthy eating makes you feel better. If you eat healthy food, then you will generally feel better throughout the day. Here are a few foods that you can eat to give you the energy and nutrients that you need to feel better on a daily basis.

One of the biggest mistakes that people make is skipping breakfast. Surely you have heard that breakfast is the most important meal of the day, but few people actually take the time to eat a good balanced breakfast. If you eat a good breakfast in the morning, your energy will increase, because your metabolism will get a kick start early in the morning.

Another reason healthy eating makes you feel better is that some foods can give you more energy than others. Fast food and sweets might give you a quick burst of energy, but your energy will not last very long, and when this energy wears off you will usually have an energy crash.

Foods that have complex carbohydrates will give you more energy, and the energy will last quite a bit longer than junk food. Some of the foods that have complex carbohydrates are whole wheat, spaghetti, and oatmeal. To eat healthy you do not need to completely give up fast food, but you need to try to balance that type of food with healthy food which will make you feel better.

Cholesterol is a sterol lipid, a form of fat, found in the cell membranes of all body tissues of humans and animals. Most of it is synthesized internally in the liver, but a part of it comes directly from animal-derived foods (meats, eggs and dairy products) present in the diet.

Cholesterol is an essential ingredient of many physiological body functions. For example, it helps produce bile, combines hormones and vitamin D, and metabolises fat-soluble vitamins (A, D, E, K). It is, therefore, important to keep cholesterol levels within an ideal range, not too low and not too high.

Link Between Cholesterol Levels and General Well-Being

Studies show a link between lower than ideal cholesterol levels and depression, anxiety, mood swings, and Parkinson’s disease. On the other hand, high cholesterol levels can lead to a host of cardiovascular and cerebrovascular diseases such as high blood pressure, heart attack, stroke, paralysis, and so on. This happens because the build up of a hard fatty deposit (the plaque) in the arteries and consequent narrowing and hardening of the arteries (atherosclerosis).

The problem of plaque formation gets worse if the fraction of HDL cholesterol in the blood is low. HDL (high-density lipoprotein) is the good cholesterol that prevents the buildup of plaque in the arteries. The HDL helps to carry the plaque-forming bad cholesterol (LDL) away from the arteries and tissues to the liver for breakdown and disposal. LDL means low-density lipoprotein.

The Age Factor

The need to pay attention to cholesterol levels increases with age. It is, therefore, important to know the various causes that can contribute to high LDL cholesterol levels and low HDL cholesterol levels. Some of these risks are:

Obesity: Obesity implies being overweight because of excess fat in the body, and excess fat translates to high cholesterol levels. The higher the total cholesterol, the higher would be the LDL level and, normally, the lower would be the HDL level.

Heredity: Heredity is another risk factor for developing high cholesterol levels, however, you can control it to some extent by adopting a healthy lifestyle and a low-cholesterol diet.

Diet: Diet plays an important role in controlling your cholesterol levels. Foods rich in cholesterol, saturated fats and trans fats push your cholesterol levels too high for your well-being.

Sedentary lifestyle: Lack of physical exercise decreases the HDL level, which in turn raises the LDL level and the total cholesterol level.

Smoking: Smoking hardens the arteries and decreases the HDL level, by increasing the LDL and total cholesterol levels.

Blood Test

A blood test called lipid or lipoprotein profiling measures the blood serum cholesterol levels, first on a fasting stomach and then after meals.

The lipid profile will give information about the total cholesterol, LDL cholesterol and HDL cholesterol.

Lab technicians measure all cholesterol levels in milligrams of cholesterol per deciliter of blood (mg/dL).

The desirable total cholesterol level is less than 200 mg/dL.

You can consider 200-239 mg/dL as borderline high, but more than 240 mg/dL is considered high.

The matching figures for LDL cholesterol are: less than 100 mg/dL (optimal); 130-159 mg/dL (borderline high) and 160-189 mg/dL (high) and more than 190 mg/dL (very high).

An HDL less than 40 mg/dL is considered a major risk factor for heart disease.

From 40 to 59 mg/dL is considered satisfactory, and above 60 mg/dL is what provides protection against heart disease and is highly desirable.

Any treatment for high cholesterol levels aims at lowering the LDL level while raising the HDL level. Adopting some lifestyle and diet changes that minimize the risk factors can effectively lower moderately to borderline high cholesterol levels, without the need for prescription drugs. But for higher cholesterol levels one has to resort to cholesterol-lowering drugs as well as making therapeutic lifestyle and diet changes.

Nowadays, more and more people are becoming overweight. The main reasons for being overweight are a low energy expenditure and – first and foremost -wrong eating habits. According to the American Obesity Association (AOA) 64.5% of all adult Americans (about 127 million people) are categorized as being overweight or obese. In many other developed countries the figures are similarly alarming. Overweight and obesity are about to turn into a global epidemic. To carry about extra weight with oneself can result in several serious health issues, such as back pain through overweight.

Most people are aware of the more commonly known causes for overweight, such as coronary heart disease, high blood pressure, diabetes and colon cancer. The majority of people, however, is not fully conscious of the health risk posed by back pain through overweight. Overweight contributes to different symptoms – the most common symptoms are osteoporosis, osteoarthritis, rheumatoid arthritis, spinal stenosis and degenerative disc disease. If you are overweight and suffer from back pain you shouldn’t take your problem lightly. The first instance of back pain can be considered as acute or short-term pain. After about 2 month the complaint is becoming chronic and usually much more difficult to treat than acute pain.

Fortunately, compared to some more complicated causes of back pain, back pain through overweight is easy to identify. Even experienced sports physicians and doctors find it hard to exactly identify some causes of back pain, because the reasons can be of a very complex nature. However, if you are overweight you know the reason for your back pains. Your spine has the function to carry your body’s weight and to balance your body. When your spine is forced to carry a lot of weight, this can lead to structural compromise, poor posture and even severe damages. Back pain through overweight can easily lead to chronic complaints and you should take immediate action in order to get rid of your extra pounds.

The lower back is most susceptible to the effects of overweight. Lower back pain through overweight is caused by problems relating to your lumbar spine. Apart from overweight, back pain is also caused by an insufficient amount of exercises for your back and your pelvis base as well as by a sedentary resulting in a poor flexibility and weak muscles in your lower back. This leads to your lower back being increasingly curved because the pelvis shifts slightly forward. The result is chronic lower back pain, and if you want to solve your problem you have to lose your extra pounds. Back pain through overweight is definitely curable by keeping a healthy and balanced diet.

The most important factor when it comes to weight loss is to permanently integrate some significant changes into your eating habits. If you change some important key factors on a permanent basis you won’t fall into the yo-yo effect trap. Combined with some physical activity you will be able to lose weight once and for all. And by losing weight you will not only get rid of back pain through overweight, but you will also be able to prevent some serious health issues, such as coronary heart disease and colon cancer.

Diabetes is a very serious medical condition. It occurs when your body does not produce and use enough insulin (which controls glucose levels). Diabetes can be categorised as either Type 1 or Type 2 and is a condition which is on the rise. You therefore need to know what to look out for.

If you have diabetes you may not notice any symptoms but there are two main signals; hypoglycaemia (low blood sugar/glucose) and hyperglycaemia (high blood sugar). If you are hypoglycaemic then your insulin has lowered your glucose levels too much and this may lead to dizziness, shaking, hunger pangs and sweating. On the other hand if you are hyperglycaemic this can result in weight loss, nausea, dizziness and/or light headedness.

Some more extreme symptoms you may notice as a diabetic are peripheral neuropathy (the loss of nerve functions in the arms and/or legs) and diabetic retinopathy (when the blood vessels of the eyes change, limiting or even eliminating vision). If you notice any of these extreme symptoms you should seek emergency medical care immediately. This will reduce the chances of permanent damage to your body.

If you start to recognise any of the symptoms listed go and see your doctor immediately. They will discusss your family’s medical history, any history of diabetes in the family, any medication you are taking and any medication you are allergic to. Your doctor is then likely to recommend one of the following tests to you:

FINGER STICK TEST:- This involves pricking your finger to draw a single drop of blood, placing this drop on a disposable test strip and then analysing the concentration of glucose in your blood using a small glucose meter machine. This test is the easiest but has approximately 10% of the accuracy of a laboratory test.

FAST PLASMA GLUCOSE TEST:- You cannot eat for 8 hours before this test. Before you arrive you will have blood drawn and tested. Once tested your blood reading should not be above 126 mg/dl. Otherwise, you could be diabetic and will need to confirm through either a Glucose Tolerance Test or Glycosylated Haemoglobin Test.

If you are diagnosed with diabetes as a result of the tests do not be alarmed. The majority of diabetes cases can be managed by improving your diet and using natural remedies. Even if you feel completely normal you should still get yourself tested by a professional doctor. It’s the only way to identify the problem and if neccessary start taking preventatory measures.

With the economy in a tailspin, most of us are feeling the effects of the financial crisis. Amidst the daily struggle to hang onto jobs, pay our bills, and save for retirement, physical wellness can take a back seat to more immediate concerns.

But the stress of trying to cope in a tough economy makes it more important than ever to care for your most valuable asset – your health. Good health can make a tremendous difference in your ability to face the pressures of uncertain times.

Nutrition

A demanding schedule can make it tempting to eat on the run; with grocery prices soaring, you may skimp on more wholesome foods in favor of cheaper alternatives. But good nutrition is the cornerstone of good health, and it is possible to eat well without draining your wallet.

- Plan Ahead
Plan a weekly menu before you shop and purchase only the items you need – you will save a lot of money.
Keep the FDA food pyramid in mind, and skip the prepackaged meals. Use fresh produce and whole grains
whenever possible – farm stands are excellent sources of fresh and inexpensive seasonal items.

- Avoid Fast Food
Although it is cheap and convenient, fast food is calorie-laden and lacking in nutritional value. Carry healthy
snacks and ignore the lure of the drive-through.

- Dine In
Restaurants are expensive, and little attention is given to the nutritional quality of the food coming out of the
kitchen. Make cooking a family event, or invite your friends – everyone will benefit from good food and the
camaraderie of preparing a meal together.

Exercise

You’ve been working overtime to make ends meet. With the bills piling up, the gym membership is an expense you can’t justify. Sticking to an exercise routine seems impractical – you’ll get back into it when things get better.

Feeling this way is understandable, but physical activity is a vital to maintaining good health. Exercising is a great way to de-stress, keep your metabolism running, and sustain a healthy body weight.

If you can’t afford the snazzy gym, you can still work out without the expensive equipment and personal trainer. Why not rediscover the pleasures of the great (and free) outdoors? Take a walk with friends, your partner, or the dog. A bike ride is an excellent workout, even if you ride a $200 model instead of a sexy, top-of-the-line racing cycle.

Take a hike and enjoy the scenery, or go for a vigorous swim. If you live in a winter climate, even sledding with the kids can be great exercise – the trudge back up the hill is a workout in itself. However you choose to stay fit, you will feel refreshed and ready to deal with any challenge.

Stress Management

Medical experts agree that high stress levels have a tremendous impact on our health. Stress weakens the immune system and depletes the hormones that promote healthy body function and mental well-being; it is also a huge factor in illnesses such as heart disease.

Make time for yourself. Yoga, meditating, or simply listening to soothing music can help you to relax, reduce your stress level, and allow your body’s self-healing abilities to take over.

Risky Behaviors

Behaviors such as smoking, heavy drinking, and drug use are never good for you. Aside from the adverse health effects, these substances can dim your outlook, exacerbate stressful situations, and impair your ability to make good decisions.

Cutting back on drinking and smoking can only be beneficial, and you will find yourself feeling more energized and positive about your life.

Preventative Health Care

It is impossible to overemphasize the importance of preventative care. Scheduling a checkup or mammogram may be the furthest thing from your mind right now, but remember that early detection is critical in treating any disease.

- Lab tests (such as pap smears) can spot diseases which are easily treated in early stages, but become
much more complicated and dangerous if allowed to progress.

- Mammograms are recommended for women ages 40 and up. Don’t duck out of your checkup with the
excuse that you don’t have time – you could be saving your life.

- Cholesterol checks are vital for older adults. Maintaining a healthy cholesterol level can minimize your risk of
stroke or heart disease.

Don’t overlook your annual checkup. Even in difficult times, you will greatly improve the quality of your life if you practice good habits and maintain a healthy lifestyle.

If you like pumpkin pie than you’ll like zone diet meals. In fact, if you like a lot of things you’ll like a zone diet. That is because you can eat almost anything you want, as long as it’s in the right proportions.

Unlike weight loss diets that focus on cutting one thing like calories or carbohydrates, zone diet meals use a strict proportional guide of 40/30/30. This means 40 percent of the calories you take in should be from carbohydrates, 30 percent from proteins, and 30 percent from low fat foods.

You can probably already see how confusing and time consuming it would be to carry on this kind of diet. And it is if you’re just doing it on your own. But as the scientific community began realizing how effective zone dieting can be many companies caught on and have produced some great products that make it much easier for you to diet zone style.

Depending on how much time you have or how much money you’re willing to spend (you usually have to choose one or the other) there are programs that go from giving you a cookbook or diet meal plans and let you run with it to delivering fresh, gourmet meals to your door at 5 am every morning.

Do It Yourself and We’ll Help

Most of these companies work similarly to the Weight Watcher’s plan. You eat what you want from a zone diet cookbook and instead of counting points, you’ll be counting food blocks of protein and carbs.

The founder of the zone diet system, Dr. Sears, currently sells this type of system. If you join his program you’ll receive all the resources you need like a shopping list generator, personalized meal planner and even a nutritionist that will answer your questions via the internet.

This works for dieters who enjoy cooking and only want to worry about one meal for their whole family. The cost is usually much lower (for example $4 a week for Dr. Sear’s service compared to $25 a day for a lower end delivery program). But it will take a considerable amount of time to research, cook and keep track of everything you need to to make a zone diet meals.

Snacking Zone Style

You can purchase snack bars and shakes that follow the zone diet rules. If you decide to go this route remember that you need to use the right recipes when you aren’t using the supplements to be able to lose weight.

Since you can only replace one or two meals a day with snack bars or shakes, a good company will show you how to do this and even provide free recipes. If not, you can find recipes online through search engines.

Diet Food Delivered

If you don’t have a lot of time, don’t like to cook, get groceries and don’t want to research all the nitty gritties of a zone diet (and believe me there are plenty) there are many companies that provide your zone diet food delivered. It is easy to spend a lot of money on these plans so you’ll want to look at several to see where you’ll get the most value.

The Formula Zone has family plans so you don’t have to think about something different to make for dinner. And some plans allow you to customize the meals for your tastes. The DineWise Diet program offers plan flexibility so you can even decide how many calories you want to take in every day.

When you are looking for a good home delivery program, make sure you check to see if their website offers advice on maintaining a healthy lifestyle beyond the foods you eat, if there are extra delivery charges, and what kind of flexibility they have when you need to skip some meals to go out of town. Customer service is also key because the company you choose will have a large part in your life.

If you’re struggling with diseases like Diabetes that effect what you need to eat or like to stick to a vegan, vegetarian or kosher diet, than you might consider zone dieting as an option. Many companies make meal plans specialized for these circumstances so you don’t have to compromise to go on a diet.
