i am looking for ideas for snacks i can buy and low sodium meals..thanks!
Stay away from prepared foods, they are all loaded with sodium. Sorry but it’s true. Be careful of buying things labeled "low sodium" or "lite" actually check the nutritional info for the exact amount. I picked up some "low salt" potato chips that were loaded with sodium. Smoked meats are out, ham, bacon, smoked sausage. Soy sauce is out.
If your dad likes lemon, use a squeeze of lemon in place of salt on that chicken breast. There are some salt substitutes on the market but I never found one that wasn’t foul tasting.
You can make some yummy chips by taking a potato or sweet potato and peeling it and then just keep using the peeler and make lots of thin slices. Spray a cookie sheet with Pam or whatever, spread the "chips" out and spray a little Pam over the top. Bake at 250 degree F. I can’t tell you how long, I just keep an eye on them, turn them over once, don’t let them actually turn brown, they’ll taste burnt. They will get a little crisper as they cool. Use an herb or some pepper or sprinkle with vinegar for seasoning. Sweet potatoes are good as is but white potatoes need some help. Of course, fresh vegies make a great snack, you can make a low salt dip using sour cream and/or cream cheese and seasonings that have no salt. Fresh herbs become your friend.
Can’t think of anything else off the top of my head. I’ll edit if I think of anything.
EDIT: And give your dad a message for me. He’ll get used to the taste of things w/o salt. It’s all a matter of hanging in there for a month or two, after that he won’t even like the taste of salt. I’ve been through this with my grandfather and now my mother and they’ve both said the same thing. I’ve been preparing Mom’s meals for three years and no longer put any salt at all in her food. When she slipped one day and took a bite of our pasta instead of hers she said it tasted like sea water and was awful.
