OK so im 14 years old and i wanted to cook dinner for my family of 4 or 5 tonight. What is a good healthy easy recipe to cook for the family that is also kid friendly?
Baked Ziti
Ingredients
* 1 pound dry ziti pasta
* 1 onion, chopped
* 1 pound lean ground beef
* 2 (26 ounce) jars spaghetti sauce
* 6 ounces provolone cheese, sliced
* 1 1/2 cups sour cream
* 6 ounces mozzarella cheese, shredded
* 2 tablespoons grated Parmesan cheese
Directions
1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.
Veggie Lasagna
Ingredients
* 2 (12 ounce) packages lasagna noodles
* 2 pounds ricotta cheese
* 4 eggs
* 1 cup grated Parmesan cheese
* 1/3 cup chopped fresh parsley
* 2 teaspoons dried basil
* ground black pepper to taste
* 1/2 cup olive oil
* 1 1/2 cups chopped onion
* 1 cup sliced carrots
* 1 1/4 cups chopped green bell pepper
* 1 (16 ounce) package chopped frozen broccoli, thawed and drained
* 3 cups chunky-style spaghetti sauce
* 2 cups shredded mozzarella cheese, divided
Directions
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
2. In a large bowl, combine ricotta cheese, eggs, Parmesan cheese, parsley, basil and ground black pepper. Stir to blend; set aside.
3. Heat oil in a large saucepan over high heat. Saute onions for about 5 minutes, stirring occasionally; add carrot slices and saute about 2 minutes, then stir in green bell pepper and broccoli. Stir all together, reduce heat to medium and cook until tender, about 5 minutes. Scrape veggies into ricotta mix and mix well.
4. Preheat oven to 350 degrees F (175 degrees C).
5. Ladle 1 cup of spaghetti sauce into a 9×13 inch baking dish and spread evenly over the bottom. Place 2 strips of lasagna lengthwise in the dish, then spread about 4 cups of the filling over the pasta. Sprinkle 1 cup of the mozzarella cheese over the filling; repeat layers.
6. Bake at 350 degrees F (175 degrees C) for 1 hour; let stand about 15 to 20 minutes, to firm up, before serving.
Easy Chicken Parmesan
Ingredients
1 jar (26 oz.) spaghetti sauce
6 Tbsp. Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.)
1-1/2 cups Shredded Mozzarella Cheese
Directions
HEAT oven to 375°F. Pour sauce into 13×9-inch baking dish. Stir in 1/4 cup (4 Tbsp.) Parmesan. Add chicken; turn to coat both sides with sauce. Cover with foil.
BAKE 30 min. Uncover.
TOP with remaining cheeses; bake 5 min. or until chicken is done (165ºF) and cheese is melted.
Quick and Easy Chili
1 pound lean ground beef
1 cup diced onion
2 cloves garlic, finely chopped
2 (16-ounce) cans kidney, pinto or black beans, drained and rinsed
2 1/2 cups ORTEGA Salsa – Thick & Chunky
1 (4-ounce) can ORTEGA® Diced Green Chiles
2 teaspoons chili powder
1/2 teaspoon crushed dried oregano
1. Cook beef, onion and garlic in large skillet until beef is browned; drain.
2. Stir in beans, salsa, chiles, chili powder and oregano. Bring to a boil. Reduce heat to low; cover. Cook, stirring frequently, for 20 to 25 minutes.
3. Garnish as desired before serving.
