WHat type of diet should you have for a person who has had a right stroke the whole left is paralized?

how can you keep them healthy so nothing goes wrong

You could try a diet of lots of veggies, some lean meat and some complex carbs. Cut all simple carbs and junk food.
This itself would increase the metabolism rate and is a healthy diet for anyone.

Physical therapy is important to keep the body mobile and exercised.

Hope this helps.
